  • 20 oz (1 ¼ lbs) boneless, skinless chicken breasts
  • 2 tbsp all-purpose flour
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp sweet paprika
  • ½ tsp salt
  • freshly ground pepper to taste
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 3 garlic cloves, minced
  • 2 tbsp parsley, freshly chopped

Instructions

  • Dry the chicken breasts with a paper towel and cut them into 1-inch pieces.
  • In a bowl, combine the chicken with flour, basil, paprika, oregano, salt, and pepper, tossing well to coat.
  • Heat a large cast iron skillet over medium-high heat, adding olive oil and 1 tbsp of butter. When hot, add the chicken in a single layer.
  • Cook without moving for about 3 minutes, then flip and cook for 2 minutes more.
  • Add the remaining butter, minced garlic, and parsley, cooking for an additional minute until the chicken is cooked through.
  • Serve immediately while hot, alongside rice, pasta, or salad.
