Description

This Beef Burrito recipe features ground beef, black beans, and melted cheese, wrapped in a soft tortilla. It’s perfect for a quick, satisfying meal that delivers bold flavors with minimal effort.


Ingredients

  • 1 tablespoon canola oil or neutral cooking oil of choice
  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 small yellow or white onion (¼-inch diced)
  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup prepared salsa
  • 6 burrito-size flour tortillas (about 10 inches)
  • 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
  • Sour cream
  • Avocado
  • Hot sauce
  • Chopped fresh cilantro

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the beef, pressing it into a 1/2-inch thick patty, and let it sizzle for 3-4 minutes until a crust forms.
  2. Sprinkle the chili powder, oregano, cumin, salt, garlic powder, and smoked paprika on the beef. Add the diced onion and break the meat into small pieces. Cook for about 4 more minutes until the meat is cooked through.
  3. Mix in the rinsed black beans and salsa, cooking until mostly liquid has evaporated and the beans are warmed through, about 1 minute. Adjust seasoning if needed.
  4. To assemble, place a tortilla on a surface, add about 3 tablespoons of cheese down the center, followed by about 2/3 cup of the beef mixture, and another 3 tablespoons of cheese on top.
  5. Fold the two short sides of the tortilla towards the center and roll up tightly. Repeat for the remaining tortillas.
  6. To serve, heat a nonstick skillet over medium heat. Add the burrito seam side down, browning for 1-2 minutes on each side until golden brown. Serve hot with your favorite toppings.

Notes

Feel free to customize your toppings with sour cream, avocado, or cilantro.
These burritos can be made ahead of time and frozen for quick meals later.
Adjust the spice level by adding more hot sauce or using spicy salsa.
