Instructions
- Scoop 6 one-tablespoon portions of chocolate sauce onto a parchment-lined plate or baking sheet and freeze while preparing the cookie dough.
- Melt unsalted butter in a light-colored saucepan over medium heat, stirring continuously until it turns golden with brown specks, about 7 minutes. Pour into a heatproof bowl and let it cool for about 10 minutes.
- Whisk light brown sugar and granulated sugar into the brown butter until smooth and slightly thickened, then add the egg, egg yolk, and vanilla extract. Whisk until glossy and well combined.
- Whisk all-purpose flour, cornstarch, baking soda, and sea salt in a separate bowl.
- Fold the dry ingredients into the wet mixture until just combined; carefully fold in chocolate chips until incorporated without overmixing.
- Divide the dough into 6 equal portions. Flatten each portion, place a tablespoon of frozen chocolate sauce in the center, and roll into a ball, ensuring the chocolate is enclosed.
- Arrange the dough balls in a greased or parchment-lined 8-inch round or square pan, ensuring they are close together.
- Chill the dough in the fridge for about 10 minutes while preheating the oven to 350°F.
- Bake for 14-15 minutes until edges are golden brown and centers look slightly underdone. Allow cooling in the pan for 5 minutes.
- Sprinkle cookies with flaky sea salt, and top with scoops of vanilla ice cream for serving.
