Description

Experience the delightful flavors of Chicken Marbella! This easy-to-make dish combines juicy chicken thighs marinated with garlic, olives, and prunes for an irresistible taste. Perfect for a quick dinner that impresses!


Ingredients

  • 4 cloves garlic
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 bay leaves
  • 1 cup red wine vinegar
  • 1 cup olive oil
  • 1/4 cup brown sugar
  • 1 cup green olives (pitted or non-pitted)
  • 1 cup pitted prunes
  • 2 tablespoons capers
  • Salt to taste
  • 8 chicken thighs
  • 1 cup white wine (for roasting)
  • Chopped parsley (for garnish)

Instructions

  1. Peel and chop the garlic cloves, using a food processor if desired.
  2. In a large glass or ceramic bowl, mix the chopped garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
  3. Add the green olives, pitted prunes, capers, salt, and the chicken thighs into the bowl. Mix well to coat the chicken in the marinade.
  4. Cover the bowl with plastic wrap and refrigerate for at least 3 hours, preferably overnight.
  5. Preheat the oven to 180C (350F). Arrange the chicken with the marinade in a large baking pan, or divide between two smaller pans to avoid overcrowding.
  6. Pour the white wine around the chicken, avoiding direct contact with the chicken skin.
  7. Roast the chicken for 50 minutes to 1 hour, until cooked through and golden brown. Check that the internal temperature reaches 74C (165F).
  8. Garnish with chopped parsley before serving.

Notes

For best flavor, marinate the chicken overnight if possible.
Adjust cooking time based on chicken thickness.
You can substitute different olives based on preference.
