Description

This Chicken Scampi with Garlic Parmesan Rice is a delightful dish featuring savory chicken, fragrant garlic, and rich parmesan. It’s a quick, easy meal that is perfect for busy weeknights or when you want to impress guests with homemade goodness.


Ingredients

  • 1 pound chicken breasts, cut into 2-inch strips
  • salt, to taste
  • 1 teaspoon lemon pepper seasoning
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 stick butter
  • 2 tablespoons minced garlic (about 6 cloves)
  • 1/4 teaspoon red pepper flakes
  • 1 1/2 teaspoons salt, divided
  • 1/2 cup dry white wine
  • 12 tablespoons fresh lemon juice
  • 1 1/2 cups uncooked white rice, jasmine or long-grain
  • 3 cups chicken broth
  • 1/2 cup fresh grated parmesan cheese
  • 2 tablespoons fresh chopped parsley
  • 2 tablespoons crispy toasted breadcrumbs, for garnish, optional

Instructions

  1. Season chicken strips with salt, lemon pepper seasoning, and garlic powder.
  2. Heat olive oil in a large skillet over medium heat and sauté the chicken until golden and cooked through. Remove the chicken and cover to keep warm.
  3. In the same skillet, melt the butter and add minced garlic, red pepper flakes, and salt. Sauté until fragrant.
  4. Pour in the white wine and cook until reduced by half, then add lemon juice and reserve some sauce for later.
  5. Add rice and chicken broth to the skillet, season with remaining salt, bring to boil, reduce heat, and cover to simmer for 15-20 minutes.
  6. Once cooked, stir in parmesan cheese, top with chicken, and drizzle with reserved sauce. Let it sit covered for 5 minutes.
  7. Garnish with crispy breadcrumbs and fresh parsley before serving.

Notes

For a spicier dish, increase the amount of red pepper flakes.
Use fresh herbs for a more vibrant flavor.
Ensure to let the rice rest before serving for the best texture.
