- 1 teaspoon lemon pepper seasoning
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 1 stick butter
- 2 tablespoons minced garlic (about 6 cloves)
- 1/4 teaspoon red pepper flakes
- 1 1/2 teaspoons salt, divided
- 1/2 cup dry white wine
- 1–2 tablespoons fresh lemon juice
- 1 1/2 cups uncooked white rice, jasmine or long-grain
- 3 cups chicken broth
- 1/2 cup fresh grated parmesan cheese
- 2 tablespoons fresh chopped parsley
- 2 tablespoons crispy toasted breadcrumbs, for garnish, optional
Instructions
- Season chicken strips with salt, lemon pepper seasoning, and garlic powder.
- Heat olive oil in a large skillet over medium heat and sauté the chicken until golden and cooked through. Remove the chicken and cover to keep warm.
- In the same skillet, melt the butter and add minced garlic, red pepper flakes, and salt. Sauté until fragrant.
- Pour in the white wine and cook until reduced by half, then add lemon juice and reserve some sauce for later.
- Add rice and chicken broth to the skillet, season with remaining salt, bring to boil, reduce heat, and cover to simmer for 15-20 minutes.
- Once cooked, stir in parmesan cheese, top with chicken, and drizzle with reserved sauce. Let it sit covered for 5 minutes.
- Garnish with crispy breadcrumbs and fresh parsley before serving.
Notes
For a spicier dish, increase the amount of red pepper flakes.
