Description

This Classic Creamy Coleslaw (Better Than Deli-Style) features a delightful mix of crunchy cabbage and carrots in a rich dressing. Perfect as a side dish for gatherings or healthy meals, its straightforward preparation makes it a must-try for anyone seeking tasty homemade recipes.


Ingredients

  • 1 pound green cabbage, shredded (about 6 cups)
  • 1 cup shredded carrots
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons granulated sugar
  • 1 cup mayonnaise
  • ½ teaspoon celery seed
  • kosher salt and freshly-ground black pepper

Instructions

  1. Toss shredded cabbage with carrots and 1 tablespoon of kosher salt in a mesh colander set in a large bowl. Allow to stand for 1 hour.
  2. Discard collected water, dry the bowl, rinse the cabbage and carrots, and dry well using a salad spinner or paper towels. Return the dried mixture to the bowl.
  3. In a separate bowl, mix vinegar and sugar until the sugar dissolves, then whisk in mayonnaise, celery seed, ¼ teaspoon kosher salt, and ½ teaspoon freshly-ground black pepper.
  4. Pour desired amount of dressing over the cabbage and carrots, seasoning to taste with additional salt and pepper.
  5. Cover and chill for at least 1 hour before serving, stirring the coleslaw again before serving. This coleslaw stays fresh, refrigerated and covered, for up to 3 days.

Notes

For a tangier flavor, adjust the amount of apple cider vinegar to taste.
Letting the coleslaw sit for a few hours allows the flavors to meld beautifully.
