Description

This Creamy Cucumber Salad with Sour Cream & Dill offers an irresistible combination of flavors, with fresh cucumbers and vibrant dill perfect for a quick, healthy meal.

Ingredients

Scale
  • ½ cup sour cream
  • 3 tablespoons red wine vinegar
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon granulated sugar (optional)
  • ¼ teaspoon garlic powder
  • Salt and pepper
  • 2 large English cucumbers (thinly sliced)
  • ¼ red onion (thinly sliced)

Instructions

  1. In a medium bowl, combine sour cream, red wine vinegar, chopped dill, sugar (if using), and garlic powder until well mixed. Adjust seasoning with salt and pepper to taste.
  2. Place the sliced English cucumbers and red onion into the bowl with the dressing and gently stir to coat them.
  3. Serve immediately at room temperature or chill in the refrigerator for 1 hour before serving.

Notes

For an extra crunch, consider adding some thinly sliced bell peppers.
This salad can be made a few hours ahead of time, allowing the flavors to meld together.
Use fresh dill for the best flavor, but you can substitute dried dill if necessary.
