This creamy white bean skillet dinner is packed with flavor from leeks, artichoke hearts, and goat cheese. Ideal for a quick, comforting meal that pleases everyone!
Ingredients
- olive oil
- leeks
- garlic
- canned white beans
- artichoke hearts
- fresh thyme
- lemon zest
- vegetable broth
- fresh spinach
- black pepper
- salt
- goat cheese
Instructions
- Preheat the oven to 350°F.
- In a large oven-safe skillet or braiser, heat olive oil over medium heat. Add leeks and garlic, sauté for 5 minutes until they are tender and fragrant. Turn off the heat.
- Mix in the beans, artichoke hearts, thyme, lemon zest, broth, spinach, pepper, salt, and half of the goat cheese. Top with the remaining goat cheese.
- Place in the oven for 15-20 minutes until warmed through. Broil for a few minutes if you want to brown the goat cheese.
- Serve with lemon wedges and Aleppo flakes if desired.
Notes
Feel free to substitute other greens for spinach if desired.
