Description

This creamy white bean skillet dinner is packed with flavor from leeks, artichoke hearts, and goat cheese. Ideal for a quick, comforting meal that pleases everyone!


Ingredients

  • olive oil
  • leeks
  • garlic
  • canned white beans
  • artichoke hearts
  • fresh thyme
  • lemon zest
  • vegetable broth
  • fresh spinach
  • black pepper
  • salt
  • goat cheese

Instructions

  1. Preheat the oven to 350°F.
  2. In a large oven-safe skillet or braiser, heat olive oil over medium heat. Add leeks and garlic, sauté for 5 minutes until they are tender and fragrant. Turn off the heat.
  3. Mix in the beans, artichoke hearts, thyme, lemon zest, broth, spinach, pepper, salt, and half of the goat cheese. Top with the remaining goat cheese.
  4. Place in the oven for 15-20 minutes until warmed through. Broil for a few minutes if you want to brown the goat cheese.
  5. Serve with lemon wedges and Aleppo flakes if desired.

Notes

Feel free to substitute other greens for spinach if desired.
This dish pairs well with crusty bread or a simple salad.
