- 1 ½ cups oat flour
- 1 cup old-fashioned rolled oats
- ½ cup coconut sugar
- 1 teaspoon vanilla
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter or coconut oil, softened
- 1 package, 8 ounces dates, chopped (about 1 ¼ cups)
- 1 cup water
- 1 teaspoon vanilla
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 350°F and line an 8×8 square baking dish with parchment paper.
- In a saucepan, combine the chopped dates and water. Bring to a boil, then lower the heat and let it simmer for about 10 minutes, stirring occasionally until thickened and the dates are soft.
- Mix in the vanilla and lemon juice into the date mixture after removing from heat.
- While the dates simmer, prepare the crumble mixture by combining oat flour, rolled oats, coconut sugar, and baking soda in a medium bowl. Stir until combined.
- Add vanilla extract and softened butter to the oat mixture, mixing with a fork or fingers until it forms a crumble.
- Place 2 cups of the oat mixture into the prepared baking pan and press it firmly to create an even crust.
- Spread the date mixture over the crust, using a spatula to smooth it out.
- Sprinkle the remaining oat mixture (1 cup) on top of the date layer, lightly pressing down with a spatula.
- Bake for 35-40 minutes, or until the filling is bubbly and the top is golden.
- Cool completely before cutting into 16 bars.
Notes
For a sweeter flavor, adjust the amount of coconut sugar.
Make sure to let the bars cool completely for easier cutting.
