Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix together the dry cake mix, melted butter, eggs, and optional extracts until a thick dough forms.
- Gently fold in the rainbow sprinkles without over-mixing; the dough will be sticky and tacky.
- Let the dough rest for about 5 minutes to allow the cake mix to absorb moisture and thicken.
- Use a medium cookie scoop to portion out the dough.
- Roll each dough ball in extra sprinkles, gently pressing to coat well.
- Space the coated dough balls about 3 inches apart on the prepared baking sheets and bake for 10-12 minutes until the edges are set but the centers look slightly underdone.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to firm up.
