Description

These Graduation Cap & Diploma Sugar Cookies are delightful treats with irresistible flavor and simple prep, perfect for celebrating accomplishments with homemade goodness.


Ingredients

Scale
  • 2 cups all purpose flour (plus more if needed)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup butter (softened slightly)
  • 3/4 cups sugar
  • 1 large egg
  • 3/4 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • 16 ounces white chocolate
  • 1/3 cup light corn syrup (plus more if needed)
  • food coloring (flesh tone and other color for your grad caps)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix flour, salt, and baking powder in a bowl and set aside.
  3. Cream butter and sugar together until light and fluffy.
  4. Stir in the egg, vanilla extract, and almond extract.
  5. Combine dry ingredients with the wet mixture and stir until just combined.
  6. If the dough is sticky, sprinkle a small amount of flour as needed.
  7. Roll out the dough on a floured surface to about 1/8 inch thickness.
  8. Cut out twelve 3-inch circles from the dough.
  9. Use a diamond-shaped cutter to create twelve grad cap shapes and cut a notch in each circle.
  10. Brush corn syrup on the edges of the diamond, insert it into the notch of the circle, and press to seal.
  11. Bake for 10-14 minutes until the edges set and tops look dry.
  12. Allow cookies to cool completely before decorating.
  13. Reserve 2 tablespoons of white modeling chocolate to color for tassels.
  14. Color 2/3 of the modeling chocolate with flesh tone and the rest with your choice of color for caps.
  15. Roll out the flesh tone chocolate to about 1/16 inch thickness and cut twelve circles.
  16. Do the same with the colored modeling chocolate for the caps and cut them into diamond shapes.
  17. Brush corn syrup on each cookie, and layer the circles and diamonds together firmly.
  18. Color modeling chocolate as desired for tassels, roll into a tube, and use a clay extruder to create strands.
  19. Cut chocolate strands to 1-inch pieces for the tassels and attach them to grad caps with corn syrup.

Notes

If the dough is too sticky, add more flour gradually until manageable.
Let the modeling chocolate rest at room temperature before working with it for best results.
Customize the colors of modeling chocolate to match your graduation theme.
