Description

These lemon bars feature a buttery crust and a zesty lemon filling that balances sweetness and tartness perfectly. This simple, homemade treat is ideal for gatherings or a quick dessert at home.


Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 4 large eggs
  • 2 tbsp lemon zest
  • 1/2 cup fresh lemon juice
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350 degrees.
  2. Prepare a 9×13 pan by lining it with parchment paper.
  3. In a medium bowl, combine butter, sugar, and vanilla to create the crust mixture.
  4. Stir in flour until well combined, then press the mixture firmly into the prepared pan.
  5. Bake the crust for 15-20 minutes or until the edges turn light brown.
  6. In a large bowl, combine sugar and flour, whisking to remove any lumps.
  7. Add eggs, lemon zest, and lemon juice and whisk until everything is combined.
  8. Pour the lemon filling over the warm crust and bake for 30-35 minutes, until the center is set and no longer jiggles.
  9. Once baked, remove from the oven and allow to cool completely at room temperature before refrigerating.
  10. Before serving, dust the bars with powdered sugar.

Notes

Make sure to cool the bars completely before cutting for clean slices.
Store any leftovers in the refrigerator for up to a week.
