- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 4 large eggs
- 2 tbsp lemon zest
- 1/2 cup fresh lemon juice
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350 degrees.
- Prepare a 9×13 pan by lining it with parchment paper.
- In a medium bowl, combine butter, sugar, and vanilla to create the crust mixture.
- Stir in flour until well combined, then press the mixture firmly into the prepared pan.
- Bake the crust for 15-20 minutes or until the edges turn light brown.
- In a large bowl, combine sugar and flour, whisking to remove any lumps.
- Add eggs, lemon zest, and lemon juice and whisk until everything is combined.
- Pour the lemon filling over the warm crust and bake for 30-35 minutes, until the center is set and no longer jiggles.
- Once baked, remove from the oven and allow to cool completely at room temperature before refrigerating.
- Before serving, dust the bars with powdered sugar.
