Description

This One Pan Cheesy Chicken Broccoli and Rice features tender chicken, vibrant broccoli, and rich, melting cheese, making it a perfect quick dinner that’s both comforting and delicious.


Ingredients

  • 3 tablespoons of extra virgin olive oil divided
  • 1/2 medium yellow onion diced
  • 1 pound boneless skinless chicken breasts cut into bite sized pieces
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 1 cup uncooked extra long grain white rice
  • 1 large bunch of fresh broccoli
  • 2 1/2 cups low-sodium chicken broth
  • 1 1/2 to 2 cups extra sharp cheddar cheese

Instructions

  • Heat two tablespoons of olive oil in a pan over medium heat and sauté the diced onions until softened.
  • Season the bite-sized chicken pieces with kosher salt and freshly ground pepper.
  • Once the onions soften, increase the heat to medium-high and add the chicken to the pan.
  • Brown the chicken pieces on all sides, then mix in the minced garlic and cook for an additional two minutes.
  • Shift the chicken to one side of the pan and add the remaining tablespoon of olive oil to the empty space.
  • Add the uncooked rice to the pan and sauté it until it slightly turns golden, about 2-3 minutes.
  • Pour in the chicken broth, bring the mixture to a boil while stirring to combine all ingredients.
  • Reduce the heat to low, cover, and let it cook for about 12 minutes.
  • Meanwhile, remove the broccoli florets and cut them into bite-sized pieces.
  • After 12 minutes, stir in the broccoli and cover again, cooking for an additional 8 minutes until everything is tender.
  • Take the pan off the heat and mix in half a cup of cheddar cheese until melted and incorporated.
  • Lastly, sprinkle the remaining cheese on top, cover the pan again for 2-3 minutes to let the cheese melt.

Notes

For an extra kick, consider adding red pepper flakes while cooking the chicken.
You can substitute chicken with turkey or plant-based protein for a different flavor profile.
Baking the dish briefly after cooking can enhance the cheesy texture.
