Description

This Pimento Cheese Pasta Salad is a crowd-pleaser with its creamy dressing, sharp cheddar cheese, and crunchy bacon. It’s ideal for quick meals or as a side dish at your next gathering!


Ingredients

  • 12 oz. uncooked short pasta
  • 2/3 cup mayonnaise
  • 1 Tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1 (4-oz.) jar diced pimento peppers, drained
  • 8 slices bacon, cooked, crumbled and divided
  • 1 Tablespoon chopped fresh chives

Instructions

  1. Boil salted water in a large pot. Add pasta, cooking until al dente. Drain and rinse with cold water, then set aside.
  2. In a large mixing bowl, combine mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper, whisking until smooth.
  3. Add shredded cheddar, diced red onion, and drained pimento peppers into the bowl and mix well. Incorporate the cooked pasta and half of the crumbled bacon.
  4. Serve the pasta salad topped with the remaining crumbled bacon and chopped chives.

Notes

For added flavor, consider using smoked bacon.
Make it ahead of time; it tastes even better after chilling in the fridge for an hour or more.
Feel free to add other veggies like bell peppers or celery for added crunch.
