This Pimento Cheese Pasta Salad is a crowd-pleaser with its creamy dressing, sharp cheddar cheese, and crunchy bacon. It’s ideal for quick meals or as a side dish at your next gathering!

- 12 oz. uncooked short pasta
- 2/3 cup mayonnaise
- 1 Tablespoon Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 2 cups shredded cheddar cheese
- 1/2 cup diced red onion
- 1 (4-oz.) jar diced pimento peppers, drained
- 8 slices bacon, cooked, crumbled and divided
- 1 Tablespoon chopped fresh chives
Instructions
- Boil salted water in a large pot. Add pasta, cooking until al dente. Drain and rinse with cold water, then set aside.
- In a large mixing bowl, combine mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper, whisking until smooth.
- Add shredded cheddar, diced red onion, and drained pimento peppers into the bowl and mix well. Incorporate the cooked pasta and half of the crumbled bacon.
- Serve the pasta salad topped with the remaining crumbled bacon and chopped chives.
Notes
For added flavor, consider using smoked bacon.
Make it ahead of time; it tastes even better after chilling in the fridge for an hour or more.
Feel free to add other veggies like bell peppers or celery for added crunch.
