- 3 tablespoons extra-virgin olive oil divided
- 3 cloves garlic minced
- 3 raw spicy chicken sausage links
- 3 cups broccoli florets
- 2 cups fresh spinach
- 1 bunch asparagus
- fine sea salt to taste
- cracked black pepper to taste
- red pepper flakes to taste
- optional: 2 to 4 tablespoons fresh parmesan cheese
Instructions
- Cook the gluten-free pasta according to package instructions until al dente.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Remove the sausage from its casings and add to the skillet, breaking it apart as it cooks until browned.
- Add broccoli florets and asparagus to the skillet, cooking until tender, about 5-7 minutes.
- Stir in the fresh spinach and cook until just wilted.
- Season the mixture with salt, black pepper, and red pepper flakes.
- Combine the cooked pasta with the sausage and vegetable mixture, adding the remaining olive oil if needed.
- Serve hot, topped with fresh parmesan if desired.
