Ingredients
Scale
- 1 loaf italian bread, sliced lengthwise
- ½ cup (1 stick / 113 g) unsalted butter, softened
- 1 teaspoon garlic salt
- 1 pound (31 to 35 per pound) medium shrimp, peeled, deveined, tails removed
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 tablespoon extra virgin olive oil
- 2 tablespoons unsalted butter
- 1 small yellow onion, diced (about ½ cup)
- 2 teaspoons garlic, minced
- 2 cups (476 g) heavy whipping cream
- 2 cups (200 g) parmesan cheese, finely grated
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes
- 1 cup (113 g) mozzarella cheese, shredded
- 1 cup (113 g) white cheddar cheese, shredded
- Fresh parsley, chopped, for garnish
Instructions
- Preheat the oven to 400°F and line a large baking sheet with parchment paper.
- Spread the softened unsalted butter on the sliced Italian bread and sprinkle with garlic salt.
- Place the bread on the baking sheet, cut side up, and bake for 10 minutes until slightly toasted.
- In a large skillet, heat the olive oil and 2 tablespoons of unsalted butter over medium heat. Sauté the diced onion until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the shrimp, kosher salt, black pepper, and crushed red pepper flakes, cooking until the shrimp turn pink, about 4-5 minutes.
- Pour in the heavy cream and bring to a simmer, then add the parmesan cheese, stirring until melted and combined. Season to taste with additional salt and pepper if needed.
- Remove the skillet from heat and mix in the mozzarella and white cheddar cheese until melted and creamy.
- Spoon the shrimp Alfredo mixture generously over the toasted garlic bread. Return to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbling and golden brown.
- Garnish with fresh chopped parsley before serving.
Notes
Make sure to use freshly grated cheese for the best melting results.
You can substitute the shrimp with cooked chicken or a mix of vegetables for variation.
For extra flavor, consider adding some lemon zest or fresh herbs in the shrimp mixture.
