Description

This Shrimp Alfredo Garlic Bread features a rich and creamy sauce topped with perfectly cooked shrimp and melted cheese. It’s a simple and delightful dish perfect for a quick dinner or a cozy night in.

  • 1 loaf italian bread, sliced lengthwise
  • ½ cup (1 stick / 113 g) unsalted butter, softened
  • 1 teaspoon garlic salt
  • 1 pound (31 to 35 per pound) medium shrimp, peeled, deveined, tails removed
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, diced (about ½ cup)
  • 2 teaspoons garlic, minced
  • 2 cups (476 g) heavy whipping cream
  • 2 cups (200 g) parmesan cheese, finely grated
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes
  • 1 cup (113 g) mozzarella cheese, shredded
  • 1 cup (113 g) white cheddar cheese, shredded
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  2. Spread the softened unsalted butter on the sliced Italian bread and sprinkle with garlic salt.
  3. Place the bread on the baking sheet, cut side up, and bake for 10 minutes until slightly toasted.
  4. In a large skillet, heat the olive oil and 2 tablespoons of unsalted butter over medium heat. Sauté the diced onion until translucent, about 3-4 minutes.
  5. Add the minced garlic and cook for another minute until fragrant.
  6. Stir in the shrimp, kosher salt, black pepper, and crushed red pepper flakes, cooking until the shrimp turn pink, about 4-5 minutes.
  7. Pour in the heavy cream and bring to a simmer, then add the parmesan cheese, stirring until melted and combined. Season to taste with additional salt and pepper if needed.
  8. Remove the skillet from heat and mix in the mozzarella and white cheddar cheese until melted and creamy.
  9. Spoon the shrimp Alfredo mixture generously over the toasted garlic bread. Return to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbling and golden brown.
  10. Garnish with fresh chopped parsley before serving.

Notes

Make sure to use freshly grated cheese for the best melting results.
You can substitute the shrimp with cooked chicken or a mix of vegetables for variation.
For extra flavor, consider adding some lemon zest or fresh herbs in the shrimp mixture.
