- 16 oz. cream cheese, softened (two 8-oz. pkgs.)
- 1 lb deli sliced corned beef or pastrami, roughly chopped
- 2 cups swiss cheese, shredded
- 1 cup sauerkraut, drained
- 1 cup sour cream
- ¾ cup thousand island dressing
- rye bread
- rye chips and crackers
- French bread
- veggies
Instructions
- In a large bowl, combine all the ingredients and mix until well combined.
- Transfer the corned beef mixture to a 4 quart or larger slow cooker bowl.
- Cook on LOW heat for 2 hours or until the cheese has melted and the dip is hot and bubbling.
- Garnish with sliced green onion or parsley if desired. Serve with rye chips, crackers or bread. Enjoy!
Notes
Make sure to drain the sauerkraut well to avoid a watery dip.
You can customize the dip by adding more cheeses or spices if desired.
This dip can be made ahead of time and reheated when ready to serve.
