Description

This Slow Cooker Reuben Dip brings together the hearty flavors of corned beef, creamy cheese, and tangy sauerkraut, creating a mouthwatering dish for any gathering. It’s perfect for quick dinners or as a fantastic appetizer. With minimal prep and all ingredients thrown into the slow cooker, you’ll have a deliciously warm dip ready in no time!


Ingredients

  • 16 oz. cream cheese, softened (two 8-oz. pkgs.)
  • 1 lb deli sliced corned beef or pastrami, roughly chopped
  • 2 cups swiss cheese, shredded
  • 1 cup sauerkraut, drained
  • 1 cup sour cream
  • ¾ cup thousand island dressing
  • rye bread
  • rye chips and crackers
  • French bread
  • veggies

Instructions

  1. In a large bowl, combine all the ingredients and mix until well combined.
  2. Transfer the corned beef mixture to a 4 quart or larger slow cooker bowl.
  3. Cook on LOW heat for 2 hours or until the cheese has melted and the dip is hot and bubbling.
  4. Garnish with sliced green onion or parsley if desired. Serve with rye chips, crackers or bread. Enjoy!

Notes

Make sure to drain the sauerkraut well to avoid a watery dip.
You can customize the dip by adding more cheeses or spices if desired.
This dip can be made ahead of time and reheated when ready to serve.
