Description

Ingredients

  • 1 ¼ cup (272g) granulated sugar
  • 2 tablespoons lemon zest (from about 2 lemons)
  • ¾ cup unsalted butter (softened)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 2 tablespoons lemon juice
  • 2 large eggs
  • 1 ¼ cup all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon kosher salt
  • ¾ cup (113g) white chocolate (roughly chopped)
  • 2 tablespoons lemon juice
  • ¼ teaspoon lemon extract
  • Pinch kosher salt
  • 1 tablespoon lemon zest (for garnish)

Instructions

  1. Preheat the oven to 350℉ and prepare an 8×8 inch pan by greasing and lining it with parchment paper.
  2. In a large bowl, combine the sugar and lemon zest; rub the zest into the sugar to enhance the lemon flavor.
  3. Add the softened butter, lemon extract, and vanilla extract, and beat with a hand mixer on medium speed until fluffy, about 1 minute.
  4. Incorporate the lemon juice and eggs, mixing until smooth on medium speed.
  5. Add the dry ingredients: flour, baking powder, and salt. Mix on low speed until just combined, then transfer the batter to the prepared pan.
  6. Bake for 25 minutes until slightly golden, and a toothpick inserted comes out clean. Allow to cool for about 15 minutes.
  7. For the white chocolate lemon glaze, combine white chocolate and lemon juice in a bowl and microwave in 20-second intervals until melted; stir until glossy, then add lemon extract and salt.
  8. Pour the glaze over the cooled brownies and sprinkle with lemon zest. Let set for at least 20 minutes before slicing.

Notes

Ensure the butter is softened for best texture.
For a richer glaze, adjust the white chocolate to taste.
