Description

This soft scrambled eggs recipe features rich smoked salmon and fresh chives, creating an impressive yet easy dish perfect for brunch or a quick dinner. It’s packed with flavor and is ready in just 15 minutes!

Ingredients

Scale
  • 1 tablespoon salted butter
  • 4 large eggs
  • 2 tablespoons milk or cream
  • Salt & pepper to taste
  • 2 ounces smoked salmon
  • chopped chives for garnish

Instructions

  • Melt butter in a nonstick pan over medium heat.
  • Whisk together eggs and milk (or cream) in a bowl. Season with salt and pepper. Add the eggs to the pan with the melted butter.
  • Gently scramble the eggs, stirring occasionally until soft curds begin to form without fully cooking the eggs.
  • Incorporate the smoked salmon and continue scrambling until the eggs are just set but remain moist and soft. Garnish with chives before serving.

Notes

For a creamier texture, use heavy cream instead of milk.
Make sure not to overcook the eggs for the best results.
Serve with toasted bagels or your favorite bread.
