Description

Savor the irresistible flavors of Sticky Orange Salmon Bowls. This dish features tender salmon coated in a sweet orange sauce, served with fresh vegetables and rice. Perfect for a quick, healthful meal any night of the week!

Ingredients

Scale
  • quick pickled onions
  • 2 baby cucumbers, thinly sliced
  • jasmine or basmati rice, cooked for serving
  • 2 pounds salmon, cut into chunks
  • 1 teaspoon garlic powder
  • kosher salt and pepper
  • 1 tablespoon olive oil
  • ⅓ cup orange juice
  • ¼ cup water
  • 3 tablespoons honey
  • 1 avocado, thinly sliced
  • 1 ripe orange, segmented

Instructions

  1. Prepare the quick pickled onions and add the cucumbers to the mixture. This can be done ahead of time and stored in the refrigerator.
  2. Cook rice so it’s ready for serving.
  3. Cut the salmon into 1-inch chunks and season with salt, pepper, and garlic powder on all sides.
  4. In a large cast iron skillet, heat olive oil over medium heat. Place the seasoned salmon in a single layer and cook for 1 to 2 minutes until golden brown.
  5. Carefully flip the salmon and cook the other side until golden brown.
  6. In a bowl, whisk together orange juice, water, and honey until blended. Pour this into the skillet, allowing it to bubble around the salmon. Toss the salmon in the sauce, letting it thicken for 1 to 2 minutes.
  7. Assemble bowls by placing rice at the bottom, topping it with salmon, orange segments, avocado slices, and pickled onions and cucumbers. Drizzle with additional sauce if desired.

Notes

Pickled onions can be made in advance for a quicker meal prep.
For added flavor, consider garnishing with sesame seeds or chopped herbs.
Make sure the salmon is fresh for the best taste.
