- 8 medium potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup crumbled bacon
- 1/2 cup chopped green onions
- salt to taste
- pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Wash and prick the potatoes, then bake them in the oven until tender, about 45 minutes to 1 hour.
- Once baked, let the potatoes cool slightly, then cut them in half and scoop out the insides into a mixing bowl.
- Mash the potato insides with sour cream, half of the cheddar cheese, crumbled bacon, chopped green onions, salt, and pepper until creamy.
- Spoon the potato mixture back into the potato skins, then top with remaining cheese and bacon.
- Place the stuffed potatoes onto a baking sheet and bake again for 15-20 minutes or until cheese is melted and bubbly.
