- ¼ cup organic vegetable stock + 2 tbsps
- 8 corn shells or tortillas, warm slightly

Instructions
- Heat olive oil in a medium skillet over medium-high heat.
- Add plant-based meat crumbles and stir, breaking them up with a wooden spoon until they resemble ground meat.
- Mix in taco seasoning and veggie stock until thoroughly combined. Bring to a boil, then reduce heat to low.
- Let the mixture simmer for 15-20 minutes, adding more stock as needed to prevent dryness, ensuring it's moist without being too saucy.
- Once cooked, remove from heat.
