- ¾ cup (149g) vegetable oil

- 2 ½–3 cups diced apples, cut into ¼-inch chunks

- ¼ cup (57g) unsalted butter

Instructions
- Preheat the oven to 350°F and grease a 10 to 12 cup bundt pan with butter and flour.
- Peel, core, and dice the apples into ¼ inch chunks, aiming for about 2.5-3 cups.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, whisk together granulated sugar, brown sugar, vegetable oil, applesauce, eggs, and vanilla extract until combined.
- Mix in half of the dry ingredients to the wet ingredients until just combined.
- Add the remaining dry ingredients and diced apples, mixing until just combined.
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 60 minutes, then cover with foil if browning too quickly, and bake for an additional 10 to 20 minutes until a toothpick comes out clean.
- Allow the cake to cool in the pan for 15 to 20 minutes, then invert onto a wire rack to cool completely.

For a richer flavor, replace vegetable oil with melted butter in the batter.
