Ingredients

Scale
  • 3 apples, peeled & diced
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp butter
  • 12 tbsp water
  • 1 cup powdered sugar
  • 12 tbsp apple juice
  • 1/4 tsp vanilla
  • 2 (16 oz) cans pillsbury grands buttermilk biscuits
  • 1 cup sugar
  • 2 tbsp cinnamon
  • 1 cup brown sugar
  • 1/2 cup butter, melted

Instructions

  1. Preheat the oven to 325 degrees and coat the inside of a Bundt pan with non-stick spray.
  2. Peel, core, and dice the apples, then mix them with sugar, cinnamon, and lemon juice.
  3. Melt the butter in a skillet over medium heat, add the apples, and cook for 8-10 minutes until tender. Keep an eye on moisture, adding water as needed. Allow to cool slightly.
  4. Layer half of the caramelized apples in the bottom of the prepared pan.
  5. Cut each biscuit into quarters.
  6. Mix sugar and cinnamon in a gallon Ziplock bag and shake well.
  7. Add half of the biscuit quarters to the cinnamon sugar mixture, shaking until well coated, then distribute evenly in the pan.
  8. Layer the remaining caramelized apples over the coated biscuits.
  9. Coat the rest of the biscuit quarters and place them in the pan.
  10. Combine brown sugar and melted butter in a saucepan over low heat, stirring until melted and combined, then pour over the biscuits evenly.
  11. Bake for 30 minutes.
  12. Let it rest for a few minutes after baking, then flip it onto a plate.
  13. Whisk powdered sugar, apple juice, and vanilla together for icing and drizzle over the warm monkey bread.

Notes

For an extra touch, add chopped nuts between the layers of biscuits and apples.
Ensure the apples are diced evenly to cook uniformly.
Allow cooling slightly before icing for better texture.
