- ½ cup chopped apple, about 1/2 a large apple
- 1 teaspoon maple syrup
- pinch of cinnamon
- ½ cup old fashioned oats
- ½–¾ cup unsweetened almond milk
- ¼ cup plain greek yogurt or coconut yogurt
- 2 teaspoons maple syrup, honey or your favorite sweetener
- ½ teaspoon vanilla
- ½ teaspoon cinnamon, or apple pie spice
- Toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds
Instructions
- Combine chopped apple, maple syrup, and cinnamon in a microwave-safe dish. Stir to coat the apples and heat for 30–60 seconds until softened. Reserve 1/4 cup of apples for topping.
- In a dish with a lid, mix oats, almond milk, yogurt, maple syrup, vanilla, and cinnamon.
- Add the heated apples to the oat mixture and stir well. Close the lid and shake gently to combine.
- Refrigerate overnight or for 30-60 minutes if preparing the same morning.
- When ready to serve, remove the lid and adjust the thickness with more yogurt or almond milk as needed. Top with remaining apples and preferred toppings.
Notes
Feel free to substitute the yogurt with a dairy-free alternative if desired.
Experiment with different toppings like nut butter or seeds for added texture and flavor.
