Description

This Avocado and Corn Salad combines fresh corn and creamy avocados for a delightful flavor. Perfect for quick meals, it’s a healthy choice that everyone will love!


Ingredients

Scale
  • 3 ears of corn, grilled
  • 2 avocados, diced
  • 2 tbsp red onion, finely diced
  • 1 green chilli, diced
  • 2 tbsp cotija cheese, or other soft cheese
  • 2 tbsp cilantro
  • 1 tbsp pumpkin seeds
  • 1 lime, juice only
  • 1 clove garlic, small
  • 3 tbsp olive oil
  • 1 tsp mexican oregano
  • 1/2 tsp salt

Instructions

  1. Grill the corn until slightly blistered, about 10 minutes, turning often. Alternatively, boil if grilling is not an option. Cut kernels once cool.
  2. In a large bowl, mix corn, diced avocados, red onion, green chilli, cilantro, Cotija cheese, and pumpkin seeds.
  3. Whisk lime juice, minced garlic, olive oil, oregano, and salt in a small bowl. Pour over the salad and mix gently. Let sit for 15 minutes before serving.

Notes

For added flavor, use fresh lime juice.
Make it a day ahead for even better flavor blending.
