- 1 ripe avocado
- 1/4 cup white wine vinegar
- 1 lemon – juice only
- 1 garlic clove
- 3/4 cup avocado oil
- 2 tbsp agave nectar
- 2 tbsp cilantro (or basil, or parsley)
- coarse kosher salt to taste
Instructions
- Prepare your blender or food processor with an opening on top for adding ingredients.
- Cut the avocado in half, remove the pit, and scoop the flesh into the blender or food processor.
- Add the white wine vinegar, lemon juice, agave nectar, garlic clove, cilantro, and salt into the blender. Do not add the oil yet!
- Close the lid and start blending, slowly drizzling in the avocado oil while blending until incorporated. Blend for a few more seconds after adding all the oil.
- Check the dressing's consistency and taste; for a thinner dressing, add an extra 1/4 cup of avocado oil and blend.
Notes
Using fresh herbs like cilantro or basil gives a vibrant flavor to the dressing.
Make sure to taste and adjust salt to your preference before serving.
For a creamier texture, add a bit more avocado oil.
