Description

Baked Chicken Tostadas bring together delicious rotisserie chicken, zesty salsa, and melted cheese on crispy tostada shells. This simple, flavorful dish makes a perfect quick dinner or snack for any gathering, offering wholesome ingredients and easy prep.


Ingredients

  • 3 cups shredded chicken
  • 1/2 cup salsa
  • 1 tablespoon taco seasoning
  • 1½ cups refried beans
  • 2 cups cheddar cheese
  • 4 tostada shells
  • 8 ounces shredded lettuce
  • pico de gallo
  • lime juice
  • sour cream

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, mix together the shredded chicken, salsa, and taco seasoning. In a separate small bowl, whisk the sour cream and lime juice together.
  3. Arrange the tostada shells on a sheet pan. Spread a layer of refried beans on each shell, followed by a layer of cheddar cheese, then the seasoned chicken. Add extra cheese on top if desired.
  4. Bake for 8-10 minutes until the cheese is melted and the chicken is warmed through.
  5. After removing from the oven, top with shredded lettuce, pico de gallo, and drizzle the lime sour cream on top. Serve immediately.

Notes

Use rotisserie chicken to save time.
Feel free to add more toppings like jalapeños or avocado for added flavor.
These tostadas can be made ahead and baked just before serving for a convenient meal.
