Description

Ingredients

  • 2 tablespoons all-purpose flour
  • 2 tablespoons light brown sugar
  • 2 tablespoons cold unsalted butter
  • 1 teaspoon vanilla extract
  • ½ cup avocado oil
  • 1 tablespoon avocado oil
  • 3 large ripe bananas, peeled and halved
  • ¼ cup maple syrup
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • ⅓ cup 5% greek yogurt
  • ½ cup almond milk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 4 oz. cream cheese, softened
  • ½ cup powdered sugar
  • 23 tablespoons milk

Instructions

  1. Heat 1 tablespoon of avocado oil in a large nonstick skillet over medium heat. Add the bananas and cook for 3 minutes, then flip and cook until golden brown, about 3 more minutes. Set aside.
  2. Preheat the oven to 350℉ and prepare an 8×8-inch dish with parchment paper.
  3. For the streusel, mix rolled oats, flour, brown sugar, cold butter, and vanilla extract in a bowl until it resembles a crumble. Set aside.
  4. Combine flour, baking powder, baking soda, salt, and cinnamon in another bowl.
  5. In a separate bowl, mix together maple syrup, avocado oil, vanilla extract, eggs, cooked bananas, yogurt, and almond milk using an electric mixer.
  6. Gradually incorporate the dry mixture into the wet mixture and mix until well combined.
  7. Pour the batter into the prepared baking dish and sprinkle with the streusel. Bake for 20 minutes, then cover with foil and bake for an additional 20 minutes. Check if the center is mostly baked before removing.
  8. While cooling, prepare the glaze by mixing cream cheese, powdered sugar, and milk until smooth.
  9. Allow the coffee cake to cool for 15 minutes before drizzling with the glaze.
