Description

These Beef Tips offer a delightful blend of tender beef, flavorful broth, and aromatic onions. Perfect for a hearty dinner, this dish is both easy to prepare and satisfying, making it a fantastic choice for any night of the week.


Ingredients

  • 2 pounds beef chuck roast cubed or stew meat
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 yellow onion chopped
  • 1 (10.5 ounce) can beef broth
  • 1 (10.5 ounce) can condensed french onion soup
  • 1 tablespoon worcestershire sauce
  • 1 bay leaf
  • chopped fresh parsley for garnish, optional
  • 3 tablespoons cornstarch
  • ⅓ cup water

Instructions

  1. Trim any fat from the beef and toss it with salt and pepper.
  2. Heat 1 tablespoon of oil in a large pot or Dutch oven over medium-high heat. Add the seasoned beef and cook in small batches until browned. Transfer the beef to a bowl and set aside.
  3. Reduce the heat to medium and add the remaining oil. Add the chopped onion and cook until softened, about 5 to 7 minutes.
  4. Return the beef to the pot, then add beef broth, condensed onion soup, Worcestershire sauce, and bay leaf. Bring to a boil, cover, and reduce heat to a simmer. Let it simmer for 1½ to 2 hours or until the beef is fork-tender.
  5. To thicken the gravy, mix cornstarch with ⅓ cup cold water and stir into the beef mixture gradually until the desired consistency is achieved.
  6. Taste and adjust seasoning with additional salt and pepper if needed. Discard the bay leaf and serve over mashed potatoes.

Notes

For extra flavor, let the beef tips marinate in the seasoning for a few hours before cooking.
Serve with fresh bread to soak up the delicious gravy.
This dish pairs well with a side of steamed vegetables.
