Description

  • 2 cups mixed berries (blueberries, raspberries, blackberries, strawberries) chopped
  • ¼ cup granulated sugar plus 1 tbsp for sprinkling
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 sheet store-bought pie dough or homemade, chilled
  • 1 egg for egg wash
  • optional: coarse sugar for sprinkling

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet by lining it with parchment paper.
  2. In a mixing bowl, combine the chopped mixed berries, ¼ cup of sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Stir to combine.
  3. Roll out the pie dough on a floured surface to form a round shape and place it on the prepared baking sheet.
  4. Spoon the berry mixture into the center of the dough, leaving a border around the edges.
  5. Fold the edges of the dough over the berries, pleating it as needed to create a rustic look.
  6. Brush the edges of the dough with the beaten egg and sprinkle with coarse sugar if desired.
  7. Bake in the preheated oven for about 30-35 minutes or until the crust is golden brown and the berries are bubbly.

Notes

For an added flavor boost, consider adding a pinch of cinnamon to the berry mixture.
You can use a mix of your favorite berries depending on what’s in season or available.
