Instructions
- Preheat the oven to 400°F and prepare a baking sheet by lining it with parchment paper.
- In a mixing bowl, combine the chopped mixed berries, ¼ cup of sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Stir to combine.
- Roll out the pie dough on a floured surface to form a round shape and place it on the prepared baking sheet.
- Spoon the berry mixture into the center of the dough, leaving a border around the edges.
- Fold the edges of the dough over the berries, pleating it as needed to create a rustic look.
- Brush the edges of the dough with the beaten egg and sprinkle with coarse sugar if desired.
- Bake in the preheated oven for about 30-35 minutes or until the crust is golden brown and the berries are bubbly.
