Description

Enjoy the incredible flavors of (Better Than) Grandma’s Zucchini Bread, featuring moist zucchini, warm spices, and a delightful sweetness. Ideal for snacks or breakfast!

Ingredients

Scale
  • 3 large eggs
  • 1 cup white sugar
  • ¾ cup light brown sugar, packed
  • 1 cup canola oil
  • 1 tbsp vanilla extract
  • 2 cups grated zucchini, firmly packed
  • 3 cups flour, spooned and leveled
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1 tbsp cinnamon, heaping
  • ¼ tsp nutmeg
  • 1 ½ c add-ins: chocolate chips, raisins, pecans, walnuts, etc.
  • 4 tbsp coarse sugar, for topping bread

Instructions

  1. Preheat the oven to 325°F.
  2. Beat the eggs with an electric hand mixer until light and frothy. Add the sugars, oil, and vanilla extract, mixing until smooth and combined.
  3. Stir in the grated zucchini.
  4. In a separate bowl, whisk together the flour, cinnamon, nutmeg, salt, baking soda, and baking powder.
  5. Add the dry ingredients to the wet mixture and stir just until combined—avoid overmixing. Fold in any optional add-ins.
  6. Grease and flour two 8.5 by 4.5-inch loaf pans. Divide the batter evenly between the pans and sprinkle a thin layer of coarse sugar on top if desired.
  7. Bake for about 50 minutes to 1 hour, or until a toothpick comes out clean. Cool for ten minutes on a rack before removing from pans. Allow to cool until ready to serve.

Notes

Ensure the zucchini is firmly packed when measuring for optimal moisture.
Add-ins like chocolate chips, walnuts, or raisins can enhance the flavor—experiment with your favorites!
For an extra sweet touch, sprinkle more coarse sugar on top before baking.
