Description

This Black Bean and Corn Salsa combines sweet corn, hearty black beans, and fresh vegetables for a snack that’s bursting with flavor. It’s healthy, easy to make, and perfect for serving at gatherings or enjoying on its own with chips or as a topping for tacos.


Ingredients

  • 2 cups frozen corn, thawed
  • 1 cup black beans, drained and rinsed
  • 1/4 cup cilantro, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh jalapeño, finely diced (optional)
  • 1/4 cup red bell pepper, finely diced
  • 2 tsp lime juice
  • 2 tsp lemon juice
  • 1/2 tsp salt

Instructions

  1. In a large bowl, combine the thawed corn and rinsed black beans.
  2. Add the finely chopped cilantro, red onion, jalapeño, and red bell pepper to the bowl.
  3. Drizzle lime juice and lemon juice over the mixture.
  4. Sprinkle with salt and gently toss everything together until well mixed.
  5. Taste and adjust seasoning if necessary.

Notes

Fresh ingredients provide the best flavor—use ripe vegetables.
Adjust the level of spiciness by adding more or less jalapeño as desired.
Allow the salsa to sit for 30 minutes to meld the flavors before serving.
