- 1/3 cup granulated sugar
- 1 tablespoon baking powder

- 6 tablespoons cold unsalted butter, cut into small cubes
- 1/2 cup cold buttermilk, plus more for brushing the tops
- 1 large egg
- 1 teaspoon vanilla bean paste or pure vanilla extract
- 1 1/4 cups blackberries
- 2 tablespoons turbinado sugar, for sprinkling on scones
- 1 cup confectioner’s sugar
- 2 tablespoons whole milk
- 1/2 teaspoon vanilla bean paste or pure vanilla extract
Instructions
- Preheat the oven to 400°F and line a large baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Use a pastry blender or your hands to cut the cold butter into the flour mixture until it resembles coarse meal with some larger lumps.
- In a small bowl, whisk together ½ cup buttermilk, egg, and vanilla extract. Pour the mixture over the flour mixture and stir until a dough forms, avoiding over-mixing.
- Gently fold in the blackberries with care.
- Transfer the dough to a floured surface and shape it into a circle, patting it gently to about 1-inch thick. Cut into 8 triangles with a sharp knife.
- Place the scones on the prepared baking sheet and freeze for 15 to 20 minutes to prevent spreading while baking. Brush tops with additional buttermilk and sprinkle with turbinado sugar.
- Bake for 18 to 23 minutes until golden brown around the edges and on the bottom, then cool for 5 minutes before transferring to a wire rack.
- Prepare the glaze by whisking confectioners' sugar, whole milk, and vanilla extract in a small bowl, then drizzle over the cooled scones.
Notes
For the best texture, keep the butter cold until you’re ready to mix it into the dough.
If you don’t have turbinado sugar, you can substitute with granulated sugar for a similar crunch.
These scones are perfect served warm, and can be paired with clotted cream or butter for extra flavor.
