- ¾ cup fresh blueberries, or frozen
- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- ¾ cup 4% cottage cheese
- 3 tablespoons maple syrup
- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste, or extract
- 1 graham cracker, crushed
Instructions
- In a small saucepan, combine the blueberries, maple syrup, and lemon juice. Heat until boiling, then reduce to low and simmer for 10 minutes until the blueberries reduce by half.
- Remove from heat and let cool for 10 minutes.
- Blend the cottage cheese, maple syrup, cornstarch, and vanilla bean paste until smooth.
- In popsicle molds, layer the cottage cheese mixture with the blueberry sauce.
- Sprinkle the crushed graham cracker on top of each layer.
- Freeze for at least 5 hours or overnight.
Notes
For a sweeter popsicle, adjust the amount of maple syrup to taste.
Ensure the cottage cheese is blended well for a creamy texture.
Feel free to substitute fresh blueberries for frozen if needed.
