- 1 ¼ cup all purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp salt
- 10 tbsp butter, melted
- 1 tsp vanilla
- 3 cups blueberries
- 2 tbsp lemon juice
- ⅓ cup sugar
- 3 tbsp cornstarch
- ½ tsp vanilla
Instructions
- Preheat the oven to 350°F and line an 8×8 baking dish with parchment paper, leaving a 1" overhang for easy removal; set aside.
- In a large bowl, combine flour, oats, brown sugar, baking powder, and salt. Adding melted butter and vanilla, stir until well mixed.
- Press ⅔ of the crust mixture into the base of the prepared baking pan and set aside.
- In another bowl, mix blueberries, lemon juice, sugar, cornstarch, and vanilla, then pour over the crust.
- Sprinkle the remaining ⅓ crust mixture over the blueberries.
- Bake for 55 minutes or until blueberries are bubbling and crust is golden. Cool completely before lifting out and slicing into 9 bars.
Notes
Ensure the blueberries are fresh for the best flavor.
For added texture, consider using a mix of frozen and fresh blueberries.
These bars slice better after they are cooled completely.
