Description

This Breakfast Casserole is a delightful blend of pork sausage, eggs, and sharp cheddar, ideal for busy mornings or special brunch occasions. With simple prep and layers of flavor, it’s the perfect gathering dish everyone will enjoy.


Ingredients

  • 1 pound pork sausage
  • 10 large eggs lightly beaten
  • 3 cups milk
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper
  • 6 cups cubed bread
  • 2 cups shredded sharp cheddar cheese
  • ½ cup diced red pepper optional
  • sliced green onion optional

Instructions

  1. Grease a 9x13x2-inch casserole dish.
  2. Cook sausage in a large skillet over medium-high heat, stirring frequently until cooked through.
  3. In a large bowl, whisk together eggs, milk, and salt until well combined.
  4. Layer half the bread in the prepared casserole dish, followed by half the cheese, half the black pepper, half the red pepper, and half the sausage. Repeat the layers.
  5. Pour the egg mixture evenly over the casserole.
  6. Cover and refrigerate overnight, or bake immediately.
  7. Preheat oven to 325°F and bake uncovered for 60-75 minutes, or until the eggs are set. Cover loosely with foil if browning too quickly.
  8. Sprinkle with sliced green onions before serving, if desired.

Notes

For added flavor, consider using spicy sausage.
This casserole can be prepared the night before and baked in the morning for convenience.
