  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¾ cup unsalted butter softened
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • ¾ cup milk
  • 2 cups diced apples (about 3 apples, peeled)
  • 1 ½ cups light brown sugar packed
  • ¼ cup unsalted butter
  • 6 tablespoons milk divided
  • ½ teaspoon vanilla extract
  • 3 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and grease and flour a bundt pan.
  2. In a large mixing bowl, mix together the flour, granulated sugar, baking powder, baking soda, and kosher salt.
  3. Add the softened butter and beat until crumbly. Then mix in the eggs, vanilla extract, cinnamon, and milk, beating for 3-4 minutes until the batter is smooth and fluffy.
  4. In a small bowl, combine the diced apples, brown sugar, and cinnamon; fold this mixture into the cake batter.
  5. Pour the prepared batter into the bundt pan and bake for 55-60 minutes, or until the cake is browned.
  6. Let the cake cool in the pan for about 10 minutes, then turn it out onto a cake plate to cool completely.
  7. For the glaze, combine brown sugar, butter, and 4 tablespoons of milk in a saucepan and bring to a boil over medium heat while stirring constantly for 2 minutes.
  8. Remove from heat, add vanilla extract, and let it cool for 15 minutes.
  9. Whisk the cooled mixture with powdered sugar and the remaining 2 tablespoons of milk until smooth, then pour over the cooled cake.

Notes

Make sure to peel the apples for the best texture.
The cake can be made a day ahead; store it in an airtight container to keep it fresh.
Feel free to add nuts for extra crunch in the batter.
