- 2 tablespoons honey
- 1 4-inch sprig thyme
- 3 large figs, cut in half
- 1/8 teaspoon vanilla extract
- 12 ounces greek yogurt, plain or vanilla
- 2 tablespoons pistachios, toasted
Instructions
- Heat a medium skillet over medium-low heat and add the honey and thyme leaves. Cook for about 1 minute.
- Add the fig halves cut-side down into the honey and caramelize for 2-3 minutes. Turn the figs over using tongs and sauté for another 2 minutes.
- Remove from heat and stir in the vanilla extract. Serve the caramelized figs over Greek yogurt, drizzled with the thyme honey and topped with toasted pistachios.
Notes
Use fresh figs for the best flavor and texture.
Feel free to substitute honey with maple syrup for a different sweetness.
You can replace pistachios with any nuts of your choice.
