- 3 cups medium shells uncooked
- 3 tablespoons butter
- 1 onion finely diced
- â…“ cup diced red bell pepper
- 1 teaspoon chili powder
- ½ teaspoon seasoned salt
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1â…“ cups milk
- 3 cups shredded sharp cheddar cheese divided
- â…“ cup shredded parmesan cheese
- 3 cups cooked chopped chicken
- 4 ounces canned mild green chiles
Instructions
- Preheat your oven to 375°F.
- Cook the medium shells to al dente according to the package instructions.
- In a skillet, melt the butter over medium heat. Add the finely diced onion and diced red bell pepper, cooking until soft, about 5 minutes. Stir in chili powder and seasoned salt.
- In a large bowl, mix together the condensed cream of chicken soup, onion mixture, milk, 2 cups of shredded cheddar cheese, and shredded parmesan cheese until well combined. Fold in the chopped chicken, canned green chiles, and cooked pasta.
- Transfer the mixture to a 9×13 casserole dish. Sprinkle the remaining shredded cheddar cheese on top.
- Bake for 30 to 35 minutes, or until the casserole is hot and bubbly.
Notes
You can use rotisserie chicken for a quicker prep time.
Feel free to add other vegetables like peas or corn for variety.
