Description

This Cheesy Ground Beef Zucchini Skillet is packed with flavor and simplicity. Made with ground beef, zucchini, and gooey mozzarella, it’s perfect for a quick dinner that feels comforting and hearty!


Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 teaspoons minced garlic
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon italian seasoning
  • 1 teaspoon beef better than bouillon
  • ½ teaspoon crushed red pepper flakes, optional
  • 1 (14.5 oz) can petite fire roasted tomatoes
  • 34 small zucchini, cut into quarter pieces
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large skillet over medium heat, brown the ground beef with the onion, breaking it up with a wooden spoon until no longer pink. Drain excess grease if necessary.
  2. Add garlic, Worcestershire sauce, Italian seasoning, beef bouillon, red pepper flakes, and undrained tomatoes. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  3. Incorporate the zucchini and simmer for an additional 10 minutes until they start to soften.
  4. Top the mixture with shredded mozzarella, reduce heat to low, cover with a lid, and let it cook for 3-5 minutes until the cheese melts. Serve hot.

Notes

You can substitute ground turkey for lean ground beef.
Adjust the amount of crushed red pepper flakes according to your spice preference.
Fresh basil can be added before serving for an extra layer of flavor.
