These Chewy Gluten-Free Scotcheroos are a delightful treat with rich peanut butter flavor and a smooth chocolate finish. Perfect for parties or a sweet snack, they’re easy to make and simply irresistible!
Ingredients

- 1–1/4 cups light corn syrup
- 1 cup granulated sugar
- 1–1/4 cups creamy peanut butter
- 1 teaspoon vanilla extract
- 6 cups gluten free crispy rice cereal
- 1 cup gluten free dark or semi-sweet chocolate chips
- 1 cup gluten free butterscotch chips
- flaky/coarse sea salt, for finishing, optional
Instructions
- Spray a 9×13” baking pan with nonstick spray and set aside.
- In a large pot, combine corn syrup and sugar. Cook over medium-low heat, stirring continuously until the sugar dissolves and the mixture begins to simmer. Remove from heat before it boils.
- Stir in peanut butter and vanilla extract until smooth.
- Mix in the crispy rice cereal until evenly coated. Transfer to the prepared baking pan and press into an even layer.
- In a medium glass bowl, melt chocolate and butterscotch chips in the microwave in 30-40 second increments, stirring until smooth. Drizzle over the bars and spread into an even layer.
- Let the bars cool for 10 minutes and sprinkle with sea salt if desired.
- Cool completely, then slice into 24 bars and serve. Store covered for up to 5 days.
Notes
For best results, use creamy peanut butter instead of natural-style.
Make sure to not cook the syrup and sugar mixture too long to avoid hard Scotcheroos.
These treats can be stored at room temperature in an airtight container.
