- ⅓ cup soy sauce
- ⅓ cup canned pineapple juice
- 2 tablespoons lime juice
- ¼ cup packed light brown sugar
- 1 tablespoon extra virgin olive oil
- 2 teaspoons sesame oil
- 2 teaspoons chipotle chili pepper powder
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 pound boneless skinless chicken breast
- 1 pineapple
- 3 bell peppers
- 1 large red onion
- fresh chopped cilantro
- lime wedges
Instructions
- In a medium bowl, combine soy sauce, pineapple juice, lime juice, brown sugar, olive oil, sesame oil, chipotle chili powder, garlic powder, salt, and pepper.
- Add chicken to the marinade, cover, and refrigerate for at least 30 minutes, or overnight for enhanced flavor.
- Preheat the grill or oven to 400°F.
- Thread the marinated chicken, pineapple, peppers, and onions onto skewers and arrange them on a plate.
- Cook kebabs: grill for 15-20 minutes, turning every 5 minutes, or bake in the oven for 15-20 minutes until chicken reaches 165°F.
- Serve with chopped cilantro and lime wedges, if desired.
Notes
Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
Feel free to use any combination of vegetables you like for added flavor.
The chicken can also be marinated overnight for enhanced taste.
