These Chocolate Zucchini Muffins are incredibly moist and flavorful, combining rich cocoa and chocolate chips with the goodness of zucchini. They are easy to make and ideal for breakfast or a sweet snack!

- 2 cups flour
- 1/2 cup cocoa powder
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 egg
- 5 tbsp butter, melted
- 1 tsp vanilla
- 1 cup milk
- 3/4 cup chocolate chips
- 1 cup zucchini, shredded
Instructions
- Preheat your oven to 375°F (190°C). Prepare a 12-cup muffin pan with liners.
- In a large mixing bowl, combine the flour, cocoa powder, white sugar, brown sugar, baking powder, and baking soda, whisking well.
- Add the egg, melted butter, and vanilla extract to the bowl and mix until well combined. Stir in the milk.
- Gently fold in the chocolate chips and shredded zucchini until evenly distributed in the batter.
- Scoop and evenly divide the batter into the muffin liners. Optionally, sprinkle extra chocolate chips on top of each muffin.
- Bake in the preheated oven for about 20 minutes, or until a toothpick comes out clean.
Notes
For an extra flavor boost, consider adding a pinch of cinnamon to the dry ingredients.
You can substitute the sugars with your preferred sweetener for a healthier version.
