Description

This classic coleslaw offers a delightful crunch with vibrant colors. Featuring fresh cabbage, carrots, and a creamy dressing, it’s a fantastic side for barbecues or picnics. Easy to prepare, this dish is full of flavor and perfect for any gathering.


Ingredients

  • 2 ¼ cups shredded green cabbage
  • ¾ cup shredded red cabbage
  • ¾ cup shredded carrot
  • ¼ cup finely chopped green onion
  • ¼ cup mayonnaise
  • 2 tbsp greek yogurt (or sour cream)
  • 1 tbsp dijon mustard
  • 1 ½ tsp apple cider vinegar (or lemon juice)
  • ¾ tsp sugar
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper

Instructions

  1. In a large mixing bowl, combine the green cabbage, red cabbage, carrot, and green onion.
  2. In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until smooth.
  3. Pour the dressing over the vegetables and toss well to evenly coat.
  4. Serve immediately or refrigerate for 15-30 minutes to allow the flavors to meld.

Notes

For extra crunch, add some chopped apples or nuts.
This coleslaw can be made a day ahead; just mix in the dressing before serving.
