- 10 ounces fettuccine pasta (or your favorite pasta)
- 1 teaspoon salt
- 2 tablespoons butter
- 3 cloves garlic, chopped
- 1 cup full-fat cottage cheese
- 1/2 cup parmesan cheese, freshly grated
- 1/2 cup milk
- salt and pepper (to taste)
Instructions
- Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente according to package directions. Reserve ½ cup of pasta water, drain, and set aside.
- In a skillet, melt the butter over medium heat. Add the garlic and sauté until fragrant, careful not to burn.
- Transfer the garlic butter to a blender. Blend in cottage cheese, Parmesan cheese, and milk until smooth and creamy.
- Return the blended sauce to the skillet. Heat over medium-low, stirring until warmed through and slightly thickened. Adjust consistency with reserved pasta water and season with salt and pepper.
- Add the cooked fettuccine to the sauce and toss to coat evenly. Serve warm with extra Parmesan if desired.
Notes
Feel free to use your favorite type of pasta for this dish.
For a lighter version, consider using low-fat cottage cheese and milk.
