Ingredients

  • 1 1/2 cups cottage cheese
  • 3 cups frozen strawberries
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 cup cottage cheese
  • 3 cups frozen banana slices
  • 3 tablespoons honey
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Place the cottage cheese in a food processor and blend until smooth and creamy, approximately 1 minute.
  2. For the strawberry flavor, add the frozen strawberries, honey, and lemon juice to the processor, blending until creamy, about 3 to 4 minutes.
  3. For the banana flavor, combine the frozen banana slices, honey, and vanilla extract in the processor and blend until creamy, also around 3 to 4 minutes.
  4. Serve the ice cream immediately or transfer it to an airtight container and store in the freezer for up to a month. If frozen, let it sit at room temperature for 5–10 minutes before scooping.

Notes

You can adjust the sweetness by varying the amount of honey used.
This ice cream can be made in advance and stored in the freezer, making it a convenient option for guests.
