Treat yourself to this Cottage Cheese Tiramisu Crepe Roll featuring creamy fillings and a soft crepe base. Perfect for dessert or an indulgent snack, this dish combines the richness of cottage cheese and espresso in a delightful roll that’s easy to make at home.


Ingredients

  • ½ cup all-purpose flour
  • ½ teaspoon kosher salt
  • 1 cup 4% cottage cheese
  • ½ cup water
  • 3 large eggs
  • 2 tablespoons unsalted butter
  • 1 tablespoon maple syrup
  • ½ cup heavy cream
  • ¾ cup 4% cottage cheese
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 2 tablespoons cocoa powder

Instructions

  1. Preheat the oven to 350℉. Line a standard size baking sheet (12"x18") with parchment paper and spray with nonstick cooking spray.
  2. Add the crepe ingredients to a high-speed blender and blend until smooth.
  3. Transfer the crepe mixture to the prepared baking sheet.
  4. Bake at 350℉ for 10 minutes. Remove from the oven and allow to cool for a few minutes before refrigerating for an hour.
  5. Make the filling by blending cottage cheese, syrup, vanilla extract, and espresso powder in a high-speed blender until smooth. Set aside.
  6. In a large bowl, whip heavy cream until stiff peaks form.
  7. Fold the blended cottage cheese into the whipped cream.
  8. Place the cooled crepe on a large cutting board. Spread the filling on the crepe, leaving 3 inches at one end.
  9. Roll the crepe tightly from the end with filling towards the empty end.
  10. Sift cocoa powder on top, slice, and serve.

Notes

Remember to cool the crepes before adding the filling for best results.
You can substitute maple syrup with honey for a different flavor.
Be gentle when folding the whipped cream to maintain a light texture.
