- 4 chicken cutlets or 2 chicken breasts cut horizontally
- 1½ teaspoons smoked paprika
- ¾ teaspoon garlic powder
- ¾ teaspoon onion powder
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil divided
- 1 small yellow onion diced
- 1 (15 ounce) can black beans drained and rinsed
- 1 (15.25 ounce) can corn kernels or southwest corn, drained
- 1 (10.5 ounce) can diced tomatoes with chilies or petite diced tomatoes, drained
- 2 tablespoons fresh lime juice juice from 1 lime
- ¼ cup barbecue sauce any variety
- ¾ cup shredded mexican cheese blend
- chopped fresh cilantro, jalapeños, and avocado for serving
Instructions
- Preheat the oven to broil at 500°F and position the rack 6 inches below the broiler.
- In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, and black pepper. Reserve 1½ teaspoons of this mixture for the cowboy caviar.
- Season the chicken on both sides with the spice mix.
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Cook the chicken, in batches if necessary, for 3-4 minutes on each side, until fully cooked (internal temperature of 165℉). Remove and set aside on a plate.
- Lower the heat to medium and add the remaining tablespoon of oil. Cook the diced onion in the skillet until tender, about 4-5 minutes.
- Add the black beans, corn, diced tomatoes, reserved seasoning mix, and lime juice to the skillet and stir well. Cook for 4-5 minutes until warmed through.
- Return the chicken to the skillet, brush with barbecue sauce, and sprinkle with shredded cheese.
- Broil for 2-3 minutes, until the cheese is melted and bubbling.
- Serve with toppings of sliced jalapeños, chopped cilantro, and avocado if desired.
Notes
For added flavor, marinate the chicken in the spice mix and lime juice for a few hours before cooking.
