- 200 g chicken breast, cut in half horizontally
- Salt and pepper to taste
- 1 tbsp olive oil
- 250 g fettuccine
- 2 cups milk, any fat percentage
- 1 1/2 cups chicken stock
- 1 large garlic clove, minced
- 1/2 cup thickened cream
- 3/4 cup freshly grated parmesan cheese
- Parsley for garnish
Instructions
- Season the chicken with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken and cook for 2 minutes on each side until golden and cooked through. Remove the chicken and let it rest for 5 minutes before slicing.
- In the same skillet, combine milk, chicken stock, and minced garlic. Bring the mixture to a simmer.
- Add the fettuccine to the skillet, stirring every 30 seconds or so until softened (about 3 minutes). Continue to reduce the heat to medium and stir occasionally until almost fully cooked, leaving some liquid in the skillet.
- When the pasta is nearly done (about 9-10 minutes), stir in the cream and parmesan cheese, mixing well.
- Allow the sauce to simmer for about 2 minutes, stirring occasionally until thickened. If the sauce thickens too much, add a splash of hot water to return it to a silky consistency.
- Season with additional salt and pepper to taste and serve immediately, garnished with freshly grated parmesan and parsley.
